Whole30...Day 26

Well, it's Friday... Usually when I'm at home on Fridays its hard to not "munch"....

My life was changed on Friday morning. Ben had found this coconut water at the beginning of our journey that he liked. The other day he brought home the coffee version of the coconut water. I saved it until I would be home so if I liked it, I could savor it. Oh....did I like it!! It was delicious. I discovered though that it's better drinking out of the bottle instead of putting in a coffee mug. I tried the coffee mug to make me feel "cooler" drinking it, but it felt like I was just drinking cold coffee.

Since the weekend was going to be full, I knew I needed to make the grocery list and go grocery shopping. One thing was different this week though...I had to figure out the "reintroduction" days because we get done with our 30 days next week!!!  I "carefully" counted, made the grocery list and then for some reason, I started doubting my counting. I recounted and figured out that we end on TUESDAY and not Wednesday.  I made a few adjustments to our meal schedule and off Deacon and I went to the store.

Once I got home, I realized it was 2 p.m. and I hadn't eaten lunch. I warmed up my left overs and I was good to go.

After I ate and Deacon napped, I started prepping dinner in stages...

  • boil & shred the chicken
  • prepped and boiled the sweet potatoes
The main items were done. Now I just need to put the "Mexican Soup" together.  Lets be real, this was not a mexican soup. It was more like a Thai soup with lots of curry and chili flakes. It was definitely the most flavorful meal we have had and honestly, I would make again but just use half the curry and chili flakes.

Whole30...Day 25

Seriously....we have yet to hit the "Tiger Blood" stage with all the energy. Tear!

Bacon and eggs it was for breakfast.  Since I didn't cook the night before, I just had enough roast and potatoes to send with Ben to work so I opted for a LaraBar and banana.

I did have an afternoon meeting at Cafe Intermezzo and had 4 cups of tea! It was orange flavored and amazing!! Obviously, no sugar added.

For dinner, we had the amazing Carne Asada that I made during our first week of Whole30. I marinated a little longer than the first time and it was once again, yummy!

Ben and I have been thinking about what we want once we complete the challenge.  Ben is all about the CHEESE!  I on the other hand am dying for a big glass of red wine and a pumpkin spice latte.

We see the light!!!

Whole30...Day 24

Eggs...do I really have to have eggs again??  I didn't exactly prepare this week for non-egg breakfast but Ben got crafty last night and prepared us an egg wrap with the left over taco meet and onions. It was super tasty and Deacon was literally crawling in my lap to eat some.

The roast was still yummy as a leftover for lunch. I'll definitely make it again.

Ben was traveling all day so he was able to figure out what to eat via a buffet for lunch. :/

For dinner, he wasn't going to get home in time for dinner so while on the road, he called in an order to Outback. He indulged in steak and broccoli.

I on the other hand was too spent to cook. Deacon got his first tooth and started teething the night before and it was tough prior to him going to bed.  I opted to have the remainder of the roast and as a side I baked apples.  I sliced an apple up, coated with ghee, cinnamon and nutmeg. I baked on 375 for 30 minutes and they were DELICIOUS!!!!  I will do those Whole30 or not!

Whole 30...Day 23

Since I have an event tonight, I cooked a roast in the crock-pot overnight so I could take for dinner and Ben would have for dinner.

I got our lunches for the following day prepared and dinners ready since I didn't need to be at work until later.

I was moving along and looked at my watch and it was almost 1p.m. and I wasn't hungry...at all!  I eventually made myself have a few bites of leftovers but just couldn't eat.  I texted Ben and he looked at the timeline and apparently during these days, people lose their appetite.  He reminded me that he didn't eat the night before.  Now it makes sense.

I did eat the roast, carrots and potatoes for dinner and it was YUMMY!!!  I made just a normal roast recipe and modified it with compliant ingredients.

Whole30...Day 22


Well, it's Monday and we didn't go grocery shopping over the weekend since we were at camp. Fortunately on Friday, I had prepped onions to get us through the week.  

We had a few eggs left and had hamburger leftovers for lunch. I had a small window of time to run to the grocery store on Monday. I feel like for the amount of groceries I bought it was record time shopping!  

Ben got to pitch his company to a large group of people at Atlanta Tech Village and I got to watch it on a live stream. It was so cool.  

While he was away, I whipped up a quick taco salad and made our lunches for the next day and had enough for him to eat when he got home.  

When he arrived, he wasn't hungry so we just went to bed instead. He survived off a Larabar...interesting....

Whole30...Day 21

The LAST day of camp has arrived.  In the morning, we had our go-to Larabar and banana.  After lunch, we had our last session and then loaded the bus to return home. Since we are on the road during lunch, the staff gives out snacks. Our leader snack bags were super yummy looking this year, but we both had a LaraBar :/

When we got home, we had time to hug on our baby and then put him down for a nap and we headed for a nap.

This was the day when you just want greasy food. We were tired, and just wanted to go grab Five Guys but instead Ben made burgers and baked fries.

We made it threw CAMP on Whole30!!

Whole30...Day 20

We survived our first night at camp.  We woke up to breakfast being a banana and LaraBar.  We stayed pretty busy so we weren't starving.

For lunch, the campers were scarfing down chicken fingers and we were heating up our potato hash.  For dinner, hamburgers (that weren't exactly hamburgers) were on the menu and we had chili.  We had had this chili before but unfortunately it was NOT good.  Won't be making that again.  Apparently we were starving the first time I made it because it was during Week 1.

I did not miss out on the "camp food" but lets be real, Ben loves that stuff so he was a bit depressed....

At the end of Saturday night, we had survived dunk tanks. pies in the face and shaving cream in the hair. Oh middle school camp...
